Oreo Cake

Who doesn’t like Oreo !!! I bet there is a child inside each and everyone of us who loves to Twist.. Lick.. & Dunk.. some Oreo goodness. Even though my childhood was all about Appams, Unniappams, & Achappams, I did enjoy my fair share of Oreos during my college days in all forms you can imagine.

When I saw this chocolate Oreo cake recipe online I couldn’t resist giving it a shot. It was a pretty huge cake (2 layers of chocolate + 1 layer of vanilla + chopped up Oreos + cream cheese filling) for a family of two but trust me you wouldn’t regret a bit making this. Indulge !!!

Here’s what you need for Vanilla cake:

  1. All purpose flour – 1½ cup
  2. Oreos (quartered) – 10 nos
  3. Granulated white sugar – 1 cup
  4. Milk – ½ cup
  5. Butter (chopped) – ½ cup
  6. Baking powder – 2 tsp
  7. Vanilla Extract – ½ tsp
  8. Salt – ½ tsp
  9. Eggs – 2 nos

Here’s what you need for Chocolate cake:

  1. All purpose flour – 1¾ cup
  2. Oreos (quartered) – 20 nos
  3. Granulated white sugar – 2 cup
  4. Buttermilk – 1 cup
  5. Hot water – ½ cup
  6. Cocoa powder – ¾ cup
  7. Vegetable oil – ½ cup
  8. Baking powder – 1 tsp
  9. Baking soda – 2 tsp
  10. Vanilla extract – 2 tsp
  11. Salt – 1 tsp
  12. Eggs – 2 nos

Here’s what you need for Oreo filling:

  1. Cream cheese (softened) – 8 oz (230 gms)
  2. Heavy whipping cream – 2 cup
  3. Icing sugar – 2 cup
  4. Vanilla extract – 1 tsp

Here’s what you need for Garnish:

  1. Chocolate Ganache
  2. Oreos (crumbled) – 10 nos
  3. Oreos (halved) – 5 nos

Directions for vanilla cake:

  1. Preheat the oven to 350 Fahrenheit
  2. Spray an 8 inch cake pan with nonstick spray and set it aside
  3. Take a stand mixer fitted with paddle attachment, add butter and beat it until it’s light and fluffy.
  4. Add sugar, eggs, vanilla extract and beat it until it’s well mixed.
  5. Sift all the dry ingredients together (all purpose flour, baking powder, salt) and add it to the above mixture and mix it well on low speed.
  6. Keep the mixer on medium low and slowly add milk into the batter and mix it until it’s smooth.
  7. Add quartered Oreo cookies to the above batter and mix gently, making sure not to break the Oreos.
  8. Pour the above batter into the cake pan and bake it for 40-45 minutes or until a toothpick inserted comes out clean.
  9. Remove the cake from the oven and allow it to cool

Directions for chocolate cake:

  1. Preheat the oven to 350 Fahrenheit
  2. Spray two 8 inch cake pans with nonstick spray and set them aside
  3. Take a stand mixer fitted with paddle attachment, add all the dry ingredients (flour, sugar, cocoa, baking soda, baking powder, salt) and mix it together
  4. Add eggs and vanilla extract to the above mixture and mix well
  5. With the mixer running on low speed, gradually add buttermilk and oil and then, slowly add hot water to the above batter and beat it until it’s all combined together.
  6. Add chopped Oreos and mix gently, making sure not to break the Oreos.
  7. Pour the above batter into two cake pans and bake it for 40-45 minutes or until a toothpick inserted comes out clean.
  8. Remove the cakes from the oven and allow them to cool

Note: While the cakes are cooling you can make your cream cheese filling

Directions for cheese filling:

  1. In a stand mixer fitted with whisk attachment, add heavy whipping cream and whisk it until stiff peaks are formed and keep it aside in the refrigerator.
  2. Take another clean bowl with a paddle attachment, add cream cheese and beat it until it’s soft.
  3. Add icing sugar, vanilla, heavy whipping cream (from step 1) to the above mixture and mix it until smooth.

Directions for cake decoration:

  1. Take a cake board and place one chocolate cake on it
  2. Add about ½ cup of filling on top of the cake and smoothen it into an even layer
  3. Place the vanilla cake on top of the filling and add another round of filling on top of it and smoothen it into an even layer
  4. Place the second chocolate layer on top of the vanilla cake and cover the entire cake in a layer of cream cheese filling
  5. To set the cake, keep it refrigerated for 20-30 minutes
  6. Remove from the refrigerator and apply a second coat of cream cheese filling. (Keep the rest of the filling in a piping bag for decoration purposes)
  7. Pour chocolate ganache on the edges of the cake a little at a time and decorate the rest of the cake with crumbled Oreos (on the walls and the centre of the cake)
  8. Pipe the rest of cream cheese filling and place the Oreo halves on top of the cake.

Notes:

  1. Make sure the cakes are in room temperature before layering with cream cheese
  2. Ensure the cake layers are even and level.
