Popsicles
Popsicle is one of my favorite things to make during the warm summer season. It’s healthy, refreshing and a great sweet treat to sip on a sunny day. Popsicles are something that scream summer and are super easy to make.
All you need is some fresh fruits, popsicle mold and a few mins of your time….Voila !!! You will have some delicious pops to snack on. You can mix and match various fruit flavors to create endless combinations. Sharing few of my fav combos with you all.
Mango-Coconut popsicles
Here’s what you need:
- Mango – 3 cups (puree or juice)
- Sugar – as required
- Coconut cream – 1 cup
- Pineapple juice – 2 tsp
- Popsicle mold & stick
Directions:
- Mix together mango puree/juice, sugar (as needed) and pineapple juice in a blender
- Sieve it into a bowl and carefully transfer the mango mix into a popsicle mold filling 1/3rd of it
- Insert the sticks, cover the molds and pop it in the freezer for 1-2 hours
- While the first layer is freezing, mix coconut cream & sugar (as needed) until the sugar is completely dissolved
- Cool the above coconut cream mixture in the refrigerator for 15 mins
- Remove the popsicle from freezer, carefully remove the lid and then pour the coconut mix over the frozen mango layer
- Repeat above the steps to get one more layer of mango and coconut cream
- Freeze it several hours or overnight and once done, run the mold under warm water for few seconds to help release the popsicles

- The above recipe makes 8-10 popsicles
Watermelon-Kiwi popsicles
Here’s what you need:
- Watermelon – 4 cups cubed (or 1 pound)
- Sugar – as needed
- Coconut cream – ½ cup
- Kiwi – 2 nos
- Lemon juice – 1 tsp
- Chocolate chips – (optional)
- Popsicle mold & stick
Directions:
- Cut the watermelon into small cubes (removing the rind & seeds)
- Take a blender, add watermelon, a spoon of lemon juice, sugar (as needed) and blend it well
- Skim the foam & pour the mixture through a fine sieve into a bowl
- Carefully transfer the above mix into popsicle mold filling 3/4th of it
- Sprinkle chocolate chips over the top and using a popsicles stick gently push down to immerse chips
- Insert the sticks, cover the molds and pop it in the freezer for 1-2 hours
- While the first layer is freezing, mix coconut cream & sugar (as needed) until the sugar is completely dissolved
- Cool the above coconut cream mixture in the refrigerator for 15 mins
- Remove the popsicle from freezer, carefully remove the lid and then pour the coconut mix over the frozen watermelon layer
- Freeze the two layers for another 1-2 hours
- While the above mix is in the last half an hour of freezing, add together kiwi and sugar in a blender and blend it until smooth
- Remove popsicle from freezer again and carefully pour the kiwi mix on top of coconut cream layer, replace the lid. Freeze until firm, several hours or overnight.
- When you’re ready to serve, run the mold under warm water for few seconds, remove the lid and slowly pull the popsicle out
